Start by heating your avocado oil over medium-high heat
Add diced chicken breasts with salt & pepper, Italian seasoning and garlic powder
Once chicken is mostly cooked, set aside on a plate
Add your onions and bell peppers and sauté until soft
Add chicken broth, tomato paste, and heavy cream to the pot
Bring it all to a boil and then reduce to a strong simmer
Add previously cooked chicken and rigatoni pasta
Cover your pot and let it cook for about 10-15 minutes until your pasta is al dente
Stir in parmesan cheese
Garnish with fresh parsley on top
