One Pot Rigatoni with Italian Chicken

Ingredients
  

  • Avocado Oil
  • Diced chicken Breasts
  • Salt
  • Black Pepper
  • Garlic Powder
  • Italian Seasoning
  • Onion
  • Bell Peppers
  • Chicken Broth
  • Tomato Paste
  • Diced Tomatoes
  • Heavy Cream
  • Rigatoni Pasta
  • Parmesan Cheese
  • Fresh Parsley Optional

Instructions
 

  • Start by heating your avocado oil over medium-high heat
  • Add diced chicken breasts with salt & pepper, Italian seasoning and garlic powder
  • Once chicken is mostly cooked, set aside on a plate
  • Add your onions and bell peppers and sauté until soft
  • Add chicken broth, tomato paste, and heavy cream to the pot
  • Bring it all to a boil and then reduce to a strong simmer
  • Add previously cooked chicken and rigatoni pasta
  • Cover your pot and let it cook for about 10-15 minutes until your pasta is al dente
  • Stir in parmesan cheese
  • Garnish with fresh parsley on top
